Welcome Xin Qi to Sarkar Lab. Xin is a Visiting PhD student at the University of Leeds. funded by the Chinese Scholarship Council (CSC), focusing on the regulation of plant protein structure and function, particularly through fibrillation, as well as the development of plant protein-starch-based gels for their use as dysphagia foods. She will be using rheology and tribology to understand the performance of the protein-starch gels. Prior to commencing her PhD at the Nanchang University University, Xin obtained the Bachelor’s degree (Food Quality and Safety) and the Master’s degree (Food Science and Engineering) from China. In her free time, she enjoys hiking, watching basketball games, and cooking.  Welcome Xin to UK and to Sarkar Lab!!
