Dr. Taskeen Niaz presents her digestibility work at a number of recent chemistry conferences

Dr Taskeen Niaz (Research and Innovation fellow, NAPIC) recently attended a series of conferences to showcase her new work on use of cost effective, high throughput in vitro digestion models to measure quality, functionality and safety of alternative proteins. She shows how these in vitro models can help to understand the behaviour of proteins during gastrointestinal digestion. She presented her work in “4th Food Chemistry Conference on Reshaping Global Food Systems” in Glasgow and Biochemical society conference on “Plant Proteins: Functions, Regulation, Production and Utility “ at Leeds, about how structural confirmations can impact protein digestibility and safety. Her work was discussed among the wider scientific community and food industry specially to understand the bioavailability and allergenicity of novel proteins.
