Great talks and Poster Presentations at the 4th UK Hydrocolloids Symposium – From Food to Bioprocessing

Three oral presentations, one flash oral presentation and three poster presentations were given by the team at the 4th UK Hydrocolloids Symposium – From Food to Bioprocessing, Leeds, UK. All the talks and posters were well-appreciated by the multidisciplinary audience in this conference.

The talks on gastric digestion of emulsions were presented by PhD Students Shuning Zhang and Andrea Araiza-Calahorra, the titles of the talks were "Modulating in vitro gastric digestion of emulsions using composite whey protein-cellulose nanocrystal interfaces" and "Protein-polysaccharide conjugate-based microgels for Pickering stabilization of oil-in-water emulsions: Influence on gastric digestion", respectively. Xin Li (Visiting PhD Student) in our lab from  Jiangnan University, China gave an oral presentation on "Pickering aqueous foam stabilization using egg white protein microgels: from bubble stability to interfacial properties".

Emma Krop (PhD Student) gave a flash presentation on her poster titled "The effect of chewing and oral lubrication on snack intake". Ben Kew (PhD Student, ERC Project LubSat) gave a poster presentation introducing quartz crystal microbalance with dissipation (QCM-D) to the audience specifically focussing on "Comparing pea protein and whey protein isolate: A case study on adsorption kinetics and friction coefficients". Dhwani Mistry (MSc Student) presented her poster on "Fate of curcumin-loaded Pickerineg emuslions during sequential gastrointestinal digestion: Comparing protein microgels-polysaccharide composite interfaces!
