Kwan Mo You publishes his first book chapter on Oral Tribology of Polysaccharides

Kwan Mo You (PhD Student, ERC LubSat Project) publishes his first book chapter titled "Oral Tribology of Polysaccharides" in Chapter 4 of the Handbook of Hydrocolloids (Third Edition) edited by Glyn O.Phillips and Peter A. Williams, 2021, Pages 93-124. In this chapter, oral tribology of hydrocolloids i.e. aqueous dispersions of starch and non-starch polysaccharides in native and structured forms are covered that are often used as fat replacers or bulking agents in the food industries.
