Morfo Zembyla's Research made it to the Cover of Journal of Colloid and Interface Science

Congratulations Morfo Zemblya for this amazing feat. Her work on Pickering water-in-oil emulsions published in Journal of Colloid and Interface Science has allowed her to make it to its inside cover. Her research funded by EPSRC SOFI CDT and Nestle involves a novel way to stabilize water-in-oil (W/O) emulsions via complex formation at the interface between Pickering polyphenol particles adsorbing from the oil side and biopolymers (proteins) co-adsorbing from the aqueous side of the interface, strengthening the mechanical properties of the adsorbed film.
