New paper on INFOGEST digestion model adapted to older adults published in Food and Function

Dr. Andrea Araiza-Calahorra (Postdoctoral Fellow, Eat4Age Project) has co-authored the paper titled "Static in vitro #digestion model adapted to the general older adult population: an INFOGEST international consensus" publihsed in Food and Function, Volume 14, pp. 4569-4582 led by Dr. Didier Dupont (INRAe, France). The objectives of the present paper were: (1) to conduct an exhaustive literature search to find data on the physiological parameters of the older adult oro-gastrointestinal tract, (2) to define the parameters of an in vitro digestion model adapted to the older adult. International experts have discussed all the parameters during a dedicated workshop organized within the INFOGEST network.  This consensus in vitro digestion model for older adults will allow significant progress to be made in understanding the fate of food in this specific population, facilitating the development of targeted foods tailored to their specific nutritional needs.
