Prof. Anwesha Sarkar (PI, Sarkar Lab) gives a talk at the Online Inaugural Symposium, Food Sensory Science at Zhejiang Gongshang University, China on 10th May 2023 on "Multiscale tribology of soft materials: Case studies on plant proteins and chocolate". In this talk, she talks about macroscale and nanoscale tribology, how to design relevant biomimetic surface and finally gives some examples on how tribological surfaces can be used to decode multiscale mechanisms of mouthfeel in chocolate or plant proteins.
