Welcome Yangyi Zheng to Sarkar Lab. Yanyi is a PhD student supervised by Dr. Evi Paximada and co-supervised by Prof. Anwesha Sarkar. His PhD research focuses on using novel techniques to improve the nutritional and techno-functional properties of plant proteins, specifically legume proteins. He is particularly interested in extraction processes of plant proteins that tend to influence structure and consequently performance of legume proteins. Prior to joining as PhD student at Leeds, Yangyi finished his Bachelor of Physiology at Monash University, Australia and Master of Food Science and Technology at RMIT, Australia. In his free time, Yangyi enjoys traveling and playing badminton. Wish you an excellent start of PhD at Leeds.
