Welcome Yi Huang to Sarkar Lab! Yi is a new PhD student supervised by Dr. Siavash Soltanahmadi and co-supervised by Prof. Anwesha Sarkar. Her PhD research will focus on the structure–function relationships of biofoams, particularly how foams stabilised by natural biomolecules behave under tribologically-relevant conditions. By combining structural and compositional characterisation with in vitro tribological measurements, she aims to better understand the mechanisms governing lubrication performance of naturally-occurring foams. Yi completed her  undergraduate studies in Food Science and Engineering, with a research focus on food microbial fermentation. And then she pursued a Master’s degree in Food Science and Nutrition at the University of Leeds, focusing on the rheological properties of food foams, which sparked her strong interests in the structure–function relationships of aerated food systems.

Outside of research, Yi enjoys photography and travelling. I wish you a great start to PhD Yi!
